WINEMAKING

  • Vinification by crus and grape varieties in small volumes
  • Ageing on lees minimum 6 months
  • Partial block of malolactic fermentation on some tanks
  • Blend with 30% reserve wine of the 2 grape varieties
  • Aged for 6 month on the lees in stainless steel tanks after
first fermentation
  • Aged for a minimum of 24 months in the bottle after
second fermentation
